Could you please explain the best recommended approach to achieve this?
I need suggestions regarding:
The creation of OAuth profile in Capture and Store, and the association with the workflow and the proper Azure AD setup for Microsoft 365 mailboxes and OAuth.

It all depends on your end goal. What do you use the email address for? For sending? For capturing? Or something else?
The creation of OAuth user is a standard step that you need to perform in your case, one for each user if you want to use multiple mailboxes.
